Roasted Garlic and Tomato Soup: A Hearty Dish for Every Season

Roasted Garlic and Tomato Soup

Roasted Garlic and Tomato Soup is a rich and comforting soup that combines the natural sweetness of roasted tomatoes with the deep, mellow flavor of roasted garlic. It is commonly served as a starter or light main meal, often accompanied by crusty bread, grilled cheese, or a fresh salad.

The history of this soup comes from the long culinary traditions surrounding both tomatoes and garlic. Tomatoes originated in western South America and were cultivated by Indigenous peoples of the Americas long before Europeans arrived. After tomatoes were introduced to Europe in the 16th century, they gradually became an important ingredient, particularly in Mediterranean cuisines.

Garlic has an even longer history. It has been cultivated and used as food and medicine for thousands of years. Ancient civilizations in Egypt, Greece, Rome, China, and other parts of Asia used garlic extensively in cooking. Its strong flavor made it an important seasoning for vegetables, meats, sauces, and soups.

Tomato soup became particularly popular in Europe and North America during the 19th century. The development of canned tomatoes and other preserved foods made tomato-based soups easier to prepare throughout the year. By the late 19th and early 20th centuries, tomato soup had become a familiar household dish.

The technique of roasting vegetables added another dimension to traditional tomato soup. Roasting tomatoes concentrates their natural sugars and gives them a slightly smoky, caramelized flavor. Roasting garlic similarly transforms its sharp, pungent taste into a mild, sweet, buttery flavor.

Roasted Garlic and Tomato Soup became especially popular among home cooks as modern kitchens made roasting and blending vegetables easier. Today, many recipes combine roasted tomatoes and whole garlic bulbs with onions, herbs, vegetable or chicken stock, and sometimes cream.

The soup is now enjoyed in many variations. Some cooks prefer a completely smooth texture, while others leave small pieces of roasted tomato. Cream can be added for richness, while fresh basil or oregano provides a bright herbal flavor.

How to Prepare Roasted Garlic and Tomato Soup

Ingredients

Main Ingredients

  • 2 pounds (about 900 g) ripe tomatoes

  • 1 whole bulb of garlic

  • 1 medium onion, roughly chopped

  • 2 tablespoons olive oil

  • 4 cups vegetable or chicken broth

  • 1 teaspoon dried basil

  • 1/2 teaspoon dried oregano

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

Optional Ingredients

  • 1/2 cup heavy cream

  • 1 tablespoon tomato paste

  • 1 teaspoon sugar, if the tomatoes are very acidic

  • Fresh basil leaves for garnish

  • Grated Parmesan cheese

  • Croutons

Procedure

Step 1: Prepare the Tomatoes

Preheat the oven to 200°C (400°F).

Wash the tomatoes and cut them into halves or quarters, depending on their size. Arrange them on a baking tray with the cut sides facing upward.

Step 2: Prepare the Garlic

Remove the loose outer layers of the garlic bulb while keeping the cloves together.

Cut approximately 1/4 inch from the top of the bulb to expose the cloves.

Place the garlic on the baking tray alongside the tomatoes.

Step 3: Add the Onion and Olive Oil

Spread the chopped onion around the tomatoes and garlic.

Drizzle the olive oil over the vegetables and sprinkle them with salt, black pepper, basil, and oregano.

Toss the tomatoes and onions gently so that they are coated with the oil and seasonings.

Step 4: Roast the Vegetables

Place the tray in the preheated oven and roast for approximately 35–45 minutes.

The tomatoes should become soft and slightly caramelized, while the garlic should become tender and golden.

Keep an eye on the garlic so that it does not burn.

Step 5: Squeeze Out the Roasted Garlic

Allow the roasted garlic to cool for a few minutes.

Squeeze the softened garlic cloves from the bulb and discard the papery skin.

The roasted garlic should have a soft, spreadable consistency.

Step 6: Combine the Ingredients

Transfer the roasted tomatoes, onions, and garlic into a large saucepan.

Add the vegetable or chicken broth and tomato paste if using.

Stir everything together.

Step 7: Simmer the Soup

Bring the mixture to a gentle boil, then reduce the heat.

Allow it to simmer for approximately 15–20 minutes. This gives the roasted flavors time to blend with the broth.

Step 8: Blend the Soup

Use an immersion blender to blend the soup until smooth.

Alternatively, carefully transfer the soup to a countertop blender in batches and blend until creamy.

If you prefer a chunkier soup, blend only part of the mixture.

Step 9: Add Cream

For a creamy version, stir in the heavy cream.

Heat gently for another 3–5 minutes, but avoid boiling the soup after adding the cream.

If the soup tastes too acidic, add a small amount of sugar to balance the flavors.

Step 10: Taste and Adjust

Taste the soup and adjust the salt, pepper, herbs, or cream according to your preference.

Step 11: Serve

Pour the hot soup into bowls.

Garnish with fresh basil, grated Parmesan cheese, a drizzle of olive oil, or croutons.

Serve immediately with crusty bread or a grilled cheese sandwich.

Nutritional Benefits

Roasted Garlic and Tomato Soup can provide several nutritional benefits:

  • Tomatoes are an excellent source of vitamin C and contain lycopene, an antioxidant associated with tomatoes' red color.

  • Garlic contains sulfur-containing compounds and various plant compounds.

  • Onions provide fiber and antioxidant compounds.

  • Olive oil provides predominantly monounsaturated fat.

  • Fresh herbs add flavor without requiring large amounts of salt.

  • Using vegetable broth and limiting cream can make the soup relatively light.

Tips for the Best Roasted Garlic and Tomato Soup

1. Use ripe tomatoes

Ripe tomatoes provide more natural sweetness and a deeper tomato flavor.

2. Do not burn the garlic

Roasted garlic should become soft and golden. Burnt garlic can make the soup bitter.

3. Roast the tomatoes properly

Allow the tomatoes to develop slightly browned edges. This caramelization gives the soup a richer flavor.

4. Adjust the acidity

Some tomatoes are naturally acidic. A small amount of sugar, cream, or additional olive oil can help balance the flavor.

5. Use fresh basil

Fresh basil added at the end gives the soup a bright Mediterranean flavor.

6. Make it creamy

For a richer soup, add heavy cream. For a lighter alternative, use milk or leave the cream out completely.

7. Serve it with bread

Crusty bread, garlic bread, or a grilled cheese sandwich pairs particularly well with the soup.
