Lasagna Soup Recipe: A Flavorful and Easy Meal for Any Occasion

Lasagna Soup Recipe

Lasagna Soup is a hearty, comforting soup that combines the familiar flavors of traditional lasagna with the convenience of a one-pot meal. It typically contains ground beef or sausage, tomatoes, Italian herbs, lasagna noodles, and cheese. The result is a rich soup with tender pasta and a cheesy topping that resembles the flavors of baked lasagna.

History of Lasagna Soup

The history of Lasagna Soup begins with the long culinary tradition of lasagna itself. Lasagna is one of the best-known dishes associated with Italian cuisine. Traditional lasagna consists of sheets of pasta layered with meat or vegetables, tomato sauce, cheese, and sometimes béchamel sauce.

The exact origins of lasagna are debated. Ancient Roman sources describe dishes made with layers of dough and other ingredients, while medieval Italian recipes show the development of layered pasta dishes. Over the centuries, different regions of Italy developed their own styles of lasagna.

Modern lasagna became particularly associated with southern Italian cooking, including versions made with tomato sauce, meat, ricotta, mozzarella, and pasta sheets. As Italian immigrants settled in the United States during the late 19th and early 20th centuries, lasagna became increasingly popular in American households.

Lasagna Soup is a much more recent creation. Rather than layering and baking the ingredients, cooks adapted the essential components of lasagna into a soup. The pasta is broken into smaller pieces and cooked directly in a tomato-based broth along with meat and vegetables.

The exact creator and date of the first Lasagna Soup are not firmly documented. It became particularly popular through American home cooking, food magazines, recipe websites, and social media. Its appeal comes from being considerably easier to prepare than traditional lasagna while retaining many of the same flavors.

Today, Lasagna Soup has become a popular comfort food, particularly during cold weather. Different versions may use ground beef, Italian sausage, chicken, vegetables, spinach, ricotta, mozzarella, or Parmesan cheese.

How to Prepare Lasagna Soup

Ingredients

For the Soup

  • 1 pound (450 g) ground beef

  • 1 tablespoon olive oil

  • 1 medium onion, finely chopped

  • 3 cloves garlic, minced

  • 1 can (14 ounces) diced tomatoes

  • 1 can (28 ounces) crushed tomatoes

  • 4 cups beef or chicken broth

  • 8 lasagna noodles, broken into small pieces

  • 1 tablespoon tomato paste

  • 1 teaspoon dried oregano

  • 1 teaspoon dried basil

  • 1/2 teaspoon Italian seasoning

  • 1/2 teaspoon paprika

  • Salt to taste

  • Black pepper to taste

  • 1 teaspoon sugar (optional, to balance tomato acidity)

For the Cheese Topping

  • 1 cup ricotta cheese

  • 1 cup shredded mozzarella cheese

  • 1/2 cup grated Parmesan cheese

  • 1 tablespoon fresh parsley or basil, chopped

Procedure

Step 1: Prepare the Ingredients

Chop the onion, mince the garlic, and break the lasagna noodles into smaller pieces. Prepare the cheeses and measure the herbs and seasonings.

Step 2: Brown the Ground Beef

Heat the olive oil in a large soup pot over medium heat. Add the ground beef and cook for about 6–8 minutes, breaking it apart with a spoon as it cooks.

Cook until the beef is no longer pink. Drain excess fat if necessary.

Step 3: Cook the Onion and Garlic

Add the chopped onion to the pot and cook for about 3–4 minutes until softened.

Add the minced garlic and cook for another 30–60 seconds until fragrant.

Step 4: Add the Tomato Ingredients

Stir in the tomato paste, diced tomatoes, and crushed tomatoes.

Mix thoroughly with the beef and vegetables.

Step 5: Add the Broth and Seasonings

Pour in the broth and add oregano, basil, Italian seasoning, paprika, salt, and black pepper.

If the tomatoes are particularly acidic, add a small amount of sugar.

Bring the mixture to a gentle boil.

Step 6: Add the Lasagna Noodles

Add the broken lasagna noodles to the soup.

Reduce the heat to medium-low and simmer for approximately 12–15 minutes, stirring occasionally. Cook until the noodles are tender but still slightly firm.

Step 7: Prepare the Cheese Mixture

While the soup is cooking, combine the ricotta, mozzarella, Parmesan, and chopped parsley or basil in a small bowl.

Mix until well combined.

Step 8: Check the Soup

Taste the soup and adjust the salt, pepper, and herbs according to your preference.

If the soup becomes too thick, add a little more broth.

Step 9: Serve

Ladle the hot Lasagna Soup into bowls. Add a generous spoonful of the cheese mixture to each serving.

The heat of the soup will soften and melt the cheeses, creating a creamy, lasagna-like topping.

Garnish with additional Parmesan, mozzarella, or fresh basil if desired.

Nutritional Benefits

Lasagna Soup can provide several important nutrients when prepared with a balance of ingredients.

  • Ground beef provides protein, iron, and vitamin B12.

  • Tomatoes provide vitamin C and the antioxidant lycopene.

  • Cheese provides protein and calcium.

  • Onions and garlic contribute flavor as well as various plant compounds.

  • Lasagna noodles provide carbohydrates for energy.

For a lighter version, lean ground beef or ground turkey can be used, and additional vegetables such as spinach, zucchini, mushrooms, or bell peppers can be added.

Tips for the Best Lasagna Soup

1. Don't Overcook the Pasta

Lasagna noodles continue absorbing liquid after cooking. Cook them until just tender to prevent them from becoming too soft.

2. Use Several Types of Cheese

Ricotta provides creaminess, mozzarella gives a stretchy texture, and Parmesan adds a rich, savory flavor.

3. Add Vegetables

Spinach, zucchini, mushrooms, carrots, or bell peppers can make the soup more nutritious and colorful.

4. Use Italian Sausage

Replacing some or all of the ground beef with Italian sausage gives the soup a stronger, more traditional Italian-inspired flavor.

5. Adjust the Thickness

If you prefer a thinner soup, add more broth. For a thicker, stew-like consistency, allow it to simmer slightly longer.

6. Serve Immediately

Lasagna noodles continue absorbing the broth as the soup sits. For leftovers, add additional broth when reheating.

Lasagna Soup is a creative adaptation of the classic lasagna, transforming its familiar combination of tomatoes, meat, pasta, herbs, and cheese into a warm and satisfying soup. Although its modern history is relatively recent and its exact creator is not clearly documented, its popularity reflects the continuing evolution of Italian-inspired and American comfort food.

With its rich tomato broth, tender pieces of lasagna pasta, seasoned meat, and creamy cheese topping, Lasagna Soup offers many of the flavors associated with traditional lasagna while requiring less assembly and baking time. It is an excellent choice for a family dinner, especially during cool weather, and can easily be customized with different meats, vegetables, and cheeses.
