The origins of Curried Chicken Stew can be traced back to the Indian subcontinent, where curry dishes have been a staple for centuries. The term "curry" itself is believed to have been derived from the Tamil word "kari," which means sauce. Indian curries typically consist of a combination of spices, herbs, vegetables, and meat or legumes, simmered together to create a rich and flavorful sauce.
As Indian cuisine spread globally through trade and colonization, curry dishes evolved and adapted to local tastes and ingredients. Curried Chicken Stew likely emerged as a fusion of Indian curry recipes and Western stew-making techniques, combining the bold flavors of Indian spices with the hearty, slow-cooked nature of stews common in European cuisines.
Ingredients
- 1 ½ lbs (680g) boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 tablespoons vegetable oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons curry powder
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- ½ teaspoon cayenne pepper (adjust to taste)
- 2 large potatoes, peeled and diced
- 2 carrots, peeled and sliced
- 1 red bell pepper, diced
- 1 cup (240ml) coconut milk
- 2 cups (480ml) chicken broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Procedure
1. Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the diced onions and cook until soft and translucent, about 5 minutes.
2. Add the minced garlic and grated ginger to the pot, stirring constantly for about 1 minute until fragrant.
3. Stir in the curry powder, ground turmeric, ground cumin, ground coriander, paprika, and cayenne pepper, coating the onions and spices with the oil. Cook for another 2 minutes to toast the spices, stirring frequently to prevent burning.
4. Add the diced chicken thighs to the pot, stirring well to coat them with the spice mixture. Cook for 5-7 minutes, until the chicken is lightly browned on all sides.
5. Add the diced potatoes, sliced carrots, and diced red bell pepper to the pot, stirring to combine with the chicken and spices.
6. Pour in the coconut milk and chicken broth, stirring well to combine. Bring the stew to a simmer, then reduce the heat to low and cover the pot with a lid. Allow the stew to simmer gently for 30-40 minutes, or until the chicken is cooked through and the vegetables are tender.
7. Season the stew with salt and pepper to taste, adjusting the seasoning as needed.
8. Serve the Curried Chicken Stew hot, garnished with fresh cilantro leaves. Enjoy with rice, naan bread, or your favorite side dish.
