Ingredients for Tomato and Lentil Soup
- 1 cup dried lentils (brown or green), rinsed and drained
- 1 tablespoon olive oil

- 2 carrots, diced
- 2 celery stalks, diced
- 1 can (14 ounces) diced tomatoes
- 4 cups vegetable broth or water
- 1 teaspoon dried thyme

Preparation Procedure
1. Heat olive oil in a large pot over medium heat. Add chopped onions and garlic, and sauté until they become translucent and fragrant, about 5 minutes.
2. Add diced carrots and celery to the pot, and continue to cook for another 5 minutes until the vegetables begin to soften.
3. Stir in the rinsed lentils, diced tomatoes (with their juices), vegetable broth or water, dried thyme, and dried oregano. Season with salt and pepper to taste.
4. Bring the soup to a boil, then reduce the heat to low and let it simmer, covered, for 25-30 minutes or until the lentils are tender.
5. Once the lentils are cooked, taste the soup and adjust the seasoning if necessary.
