2 boneless, skinless chicken breasts

1/4 cup hoisin sauce

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon honey

2 cloves garlic, minced

1 teaspoon grated ginger

1 tablespoon vegetable oil

For the Sandwich:

8 slices of bacon

4 leaves of romaine lettuce

2 large tomatoes, sliced

4 sandwich rolls or slices of your favorite bread

Mayonnaise (optional)

Salt and pepper to taste

Procedure

Prepare the Hoisin Chicken:

In a medium bowl, combine the hoisin sauce, soy sauce, rice vinegar, honey, minced garlic, and grated ginger. Mix well.

Add the chicken breasts to the bowl, ensuring they are well-coated with the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more intense flavor.

Heat the vegetable oil in a large skillet over medium-high heat. Add the marinated chicken breasts and cook for about 5-7 minutes on each side, or until the chicken is cooked through and has a nice caramelized exterior. Remove from heat and let the chicken rest for a few minutes before slicing it thinly.

Cook the Bacon:

While the chicken is marinating, cook the bacon in a separate skillet over medium heat until crispy. Remove the bacon from the skillet and place it on a paper towel-lined plate to drain excess grease.

Assemble the Sandwich:

Slice the sandwich rolls or bread and lightly toast them if desired.

Spread a thin layer of mayonnaise on one side of each slice of bread.

Layer the sliced hoisin chicken on the bottom half of the bread.

Add a few slices of crispy bacon on top of the chicken.

Place a leaf of romaine lettuce and a couple of tomato slices on top of the bacon.
